Here's a recipe from http://goneraw.com for a delicious and healthy alternative to potato chips - CHEESY KALE CRISPS. They are highly addictive (and normally very expensive if you buy them from health food stores).
Ingredients:
1 large bunch of curly, green kale (washed, large stems removed, torn into bite-size pieces)
COATING:
1 cup raw cashews (soaked 2 hours)
1 red bell pepper; seeded and chopped
juice of 1 lemon
2 teaspoons agave (optional, if you have a sweet tooth; I prefer savory kale crisps)
1 Tablespoon nutritional yeast*
1/2 teaspoon Himalayan pink crystal salt (use more or less to taste)
Preparation:
Put the red bell pepper in the food processor first to blend. Next, add coating ingredients to the food processor, and blend until smooth (a blender might work too). Using your hands (yes, it gets messy!), massage coating onto kale pieces and inside of the kale curls. Dehydrate at 105 degrees Fahrenheit overnight or until coating is dry (might also be able to bake in an oven if you don't have a dehydrator).
*Nutritional yeast is different from conventional yeast. You can buy it at a health food store like Whole Foods. Most likely, you will find it in the supplements section as many vegetarians and vegans use this yeast as a vitamin B supplement. I think that this ingredient is what actually gives the kale crisps the cheesy flavor.
